Über Uns

Wir sind ein Vater-Tochter Gespann und kommen aus dem schönen und idyllischen Altenjahn zwischen Itzehoe und Rendsburg. Der Hof ist seit 1868 in unserem Besitz, früher wurden hier Schweine und Schafe gehalten bis später die Rinderhaltung eingeführt wurde. Es begann mit einer Milchkuhhaltung und Bullenmast. Dies wurde mit der Zeit eingestellt und auf Mutterkuhhaltung mit Angus- und Fleckvieh Rindern umgestellt.
Seit 2018 züchten wir die edelste und teuerste Fleischrasse: Das Wagyu-Klasse statt Masse!
Der Hof wird im Nebenerwerb geführt mit rund 30 Rindern bestehend aus Fullblood,-Wagyu F1 Kreuzungen und einigen Angus Rinder.

Das besondere am Wagyu Fleisch :

Im Gegensatz zu den herkömmlichen Fleischrassen ist beim Wagyu das Fett in größeren Mengen und außergewöhnlich gleichmäßig in der Muskulatur verteilt, was zu einer sehr feinen Marmorierung führt, die für den besonderen Geschmack des Fleisches verantwortlich ist .

Auch ist es im Vergleich zum Fleisch anderer Rinderrassen arm an Cholesterin, bietet ein besseres Fettsäuren-Verhältnis und stellt eine effektive Quelle für Omega-3- und Omega -6- Fettsäuren, Vitamin B, Eisen und essenzielle Aminosäuren dar.
